I have yet to find an Iraqi cookbook that doesn’t have the necessary kaika al-burtuqal (orange cake)(كيكة البرتقال).
Successful from the first, this will quickly become a tea-time staple.To enhance the orange flavor, grated orange rind is added, which can be just as easily omitted.
Some people like to add a little bit of ground cardamom, which is also really nice, or some coconut flakes.
1/2 cup oil
1 cup orange juice
1 tsp grated orange rind
1 3/4 cup sugar
1 Tbsp baking powder
1 tsp vanilla
3 cups flour
Preheat oven to 360°F.
Beat the eggs and oil well until light and creamy.
Add the orange juice, zest, and sugar; beat to dissolve the sugar.
Add the sifter flour, salt, baking powder, and vanilla; beat until incorporated.
Pour the batter in the buttered and floured tin, bake for 1 hour.
Best eaten the next day.
