Summer is undeniably here, and this calls for simple, light, and refreshing food. Therefore I decided to make a composed salad using yesterday’s chicken pistachio terrine, and incorporating it with a miso salad dressing.I arranged terrine slices, radishes, onion. and avocado slivers on a bed of lettuce. This was topped with a spontaneous sprinkling of ruby pomegranate seeds, and then drizzle with the miso salad dressing.
Perfect combination of flavors and absolutely light and refreshing for a summer lunch.
