304. Muesli Breakfast Bars

Whether you are a student, employed, or just stay-at-home, there will be times when you need a fast breakfast. A fast breakfast on the go does not necessarily mean unhealthy and fattening.
These muesli oat bars are the ideal thing for just that.
They are fantastically healthy, absolutely delicious, and oh-so-easy to make: all you need is muesli and a can of sweetened condensed milk.
They reminded me of flapjacks, except I liked them more.
Make a batch of these, store them in an air-tight container, and you’ve got breakfast for the entire week ahead.No excuse now to skip breakfast.

You can use any muesli you like, whether pre-packaged or home made muesli.
I personally prefer my home-made muesli, because I can put in it what I like, and in the quantity I like.

Ingredients:

1 can (395g) sweetened condensed milk
2 1/2 cups oats
1/2 cup dessicated coconut
1 cup dried cranberries
1 cup puffed rice (rice crispies)
1 cup mixed seeds (pumpkin, sunflower, sesame)
1 cup unsalted peanuts

Method:

Preheat the oven to 260°F, and oil a 23cm square baking tin, or use a throw-away foil one.
Warm the condensed milk in a large pan, stirring all the time to make sure it doesn’t burn.
It will only take a few minutes, and you will feel it getting thinner as it heats through.
Meanwhile, mix together all the other ingredients and then add the warmed condensed milk, using a rubber or wooden spatula to fold and distribute.
Spread the mixture into the tin and press down with the spatula or, better still, your hands (wearing disposable vinyl gloves to stop you sticking), to even the surface.
Bake for 1 hour, then remove from the oven and, after about 10 minutes, cut into chunky bars of your preferred size.
Let cool completely.

  1. I made these muesli bars as you suggested, for breakfast on the go as i'm a student. They are very delicious and provide a much needed boost of energy. However, may i suggest incorporating peanut butter in the mix and maybe a drizzle of chocolate as a finishing touch?
