This ice cream is infused with fresh mint flavor that is unbelievably pungent and aromatic and puts mint ice cream flavored by mint essence to shame. The chocolate is delicately shaved or very finely sliced into slivers. This form of chocolate is named stracciatella. The recipe I found on cheap ethnic eatz called for chocolate chunks, but I wanted to refine this ice cream further by substituting chunks with stracciatella.
A whole cup of chopped mint leaves got reduced to a single tablespoon after infusing all its goodness into the milk. If you don’t yet own an ice cream maker, I highly recommend you invest in one (and there are some very affordable options) as it will quickly earn its keep.
1 1/2 cups whole milk
1 cup mint leaves, chopped
3/4 cup sugar
pinch of salt
1 1/2 cups cream
green food coloring, optional
100g dark chocolate, sliced into stracciatella
Heat milk in saucepan on stove over medium heat with the sugar, salt and mint leaves added.
When it is hot, but not boiling, remove from heat and let mint seep in the warmed milk for about 45 minutes.
Add the cream.
Strain the mint leaves from the milk and press it against the strainer to release as much flavor as you can.
Add the food coloring if desired, 4 to 7 drops.
Chill mixture for 1 hour.
Churn it according to the manufacturer instructions of your ice cream maker.
While the ice cream is churning, about 15 minutes in, add the chocolate.
