Fortunately or unfortunately, an iftar table in Ramadan is not quite complete without a little fried something.
All the better if that something is mostly composed of vegetable, no?These carrot fritters fit the bill, following the footsteps of courgette patties.
They are lighter than expected, milder than expected, and better than expected.
In short, it does one good to go for the unexpected and replace cheese sambousak with the likes of this once in a while.
2 cups finely grated carrot (about 4-5 carrots)
1 medium onion, grated
1/2 cup breadcrumbs
1 tsp salt
1/4 tsp pepper
1-2 cups oil, for frying
In a bowl, mix the finely grated carrots, grated onion, eggs, breadcrumbs, salt, and pepper until very well combined.
This “batter” should yield a good 12 to 15 patties, shaped easily by hand, and about a centimeter thick.
Heat the frying oil in a pan over medium-high and drop the patties one by one in the hot oil.
The oil should come halfway up the sides of the patties.
Fry on both sides until a golden brown.
Serve with a side of yogurt dip.
