704. Shrimp Curry (Diet)

One of the reasons why Indians are so smart is their daily consumption of spices. These spices unclog any arteries, liven up dull minds, and are excellent for the heart.This shrimp curry I found on Pinterest is not only superbe because it is low in fat, but it is also absolutely packed in so many healthy spices which are very good for the brain, heart, and body.
You can add as much chilli as you dare, but do have the strained yogurt or Greek yogurt handy to put out any fires.
Eat it by itself for a light healthy meal or pair with rice or a naan bread for a more hearty one.

Ingredients:

2 Tbsp olive oil
1 onion, finely chopped
2 cloves garlic, crushed
thumb-sized ginger, grated
4 tsp turmeric
2 tsp garam masala
2 tsp paprika
2 tsp chilli flakes
2x400g cans chopped tomatoes
2 Tbsp brown sugar
400g prawns
1 tsp salt & pepper
1 Tbsp greek yogurt + more for serving

Method:

Saute in the hot olive oil the onions, garlic, ginger, spices, and chilli.
Fry together until the onions are soft and a fragrant spice paste is formed.
Stir in the tomatoes, sugar, salt, and pepper.
Bring to a simmer and let the sauce reduce and thicken for about 10-15 minutes.
Once the sauce has thickened up to your liking,  add the prawns. If raw, cook until they curl up and turn opaque. If frozen, cook until thawed and heated through. Five minutes in either case should suffice.
Stir a tablespoon of the yogurt through, this will make it a bit more of a “curry color”.
Serve with cold yogurt. Eat by itself for a light healthy lunch or pair with rice or a naan bread for a more hearty dinner.
