I was tempted to call this Mediterranean Salad, since it does indeed employ Mediterranean ingredients and style, but this title has already been claimed by another fantastic salad on the blog. Hence the uncreative nomenclature of Capsicum, Tomato, Haloomi Salad.Basically the title says it all. The ingredients are capsicum, tomato, and haloomi, plus some olives, avocado, and a simple dressing. Substituting feta cheese for the haloomi would also be great.
2 cups cherry tomatoes
1 yellow capsicum
1/4 cup kalamata olives
1/4 cup haloomi cheese, cubed
2 Tbsp olive oil
1½ Tbsp white wine vinegar
1 tsp dried oregano
salt and pepper
Halve or quarter the cherry tomatoes; cube the capsicum and avocado; slice the olives.
Combine all the ingredients in a large mixing bowl.
Can be stored in the refrigerator for 3-4 days.
