831. Peach Cobbler

Cobbler is another dessert consisting of a baked fruit and some form of pastry. In this case, the pastry is flattened into circles and placed slightly overlapping over the fruit to resemble a cobblestone pathway. Sweet, intoxicating seasonal peaches were my fruit of choice.A teeny pinch of nutmeg and cinnamon are stirred into the sliced and peeled  ripe peaches as a hint. Some cornstarch catches all the juices and turns them into a bubbly, jammy sauce and prevents the dish from getting soggy. It is traditional to serve the warm cobbler with whipped cream or ice cream.

Ingredients:

8 fresh peaches (peeled, pitted and sliced into thin wedges)
1/4 cup white sugar
1/4 cup brown sugar
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1 tsp fresh lemon juice
2 tsp cornstarch

1 cup flour
1/4 cup white sugar
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp salt
6 Tbsp butter, chilled and cut
1/4 cup boiling water
2 Tbsp powdered sugar

Method:

Preheat oven to 425F.
In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
Meanwhile, in a food processor, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
Blitz in the butter until mixture resembles coarse meal. Pulse in the water until just combined.
Remove peaches from oven, and take balls of dough and flatten in your palms to form the cobbles.
Arrange slightly overlapping over the peaches.
Sprinkle entire cobbler with the powdered sugar.
Bake until topping is golden, about 30 minutes.
